Nourishing Fall and Winter vegan dish with all seasonal ingredients. Prep and cooking time in under 10 minutes.

Brussel Sprouts are antioxidants rich, promotes healthy digestion, alkalizes the body and much more. One-cup serving of Brussels Sprouts meets your vitamin C and vitamin K percentages for the day, while also providing folate, potassium, B vitamins, manganese and other key nutrients.

Radishes and their leaves are a good source of vitamin C too. Studies have found radishes can help lower cholesterol, blood pressure and chances of getting certain cancers.

So go ahead, munch away!

We bought the organic brussel sprouts already shaved to save time. Layering in chopped local red apples were delicious to give it a natural sweetness.

Ingredients:

*Buy Organic and local

4 cups of shaved brussel sprouts

1 cup of chopped green onions

3/4 cup of watermelon radishes (cubed)

1/2 cup of sunflower seeds (we used “Go Raw” brand), use more seeds to your liking

1.5 tbsp of coconut oil

3 tbsp of coconut aminos (use more to your liking)

sea salt + pepper

Top with fresh chopped apples

Directions:

In a large pan add coconut oil and onions and saute on low/medium for 1-2 minutes then add all the other ingredients. Stir frequently for a few minutes. Pour all into a large serving dish and add the apples and mix more.

Enjoy!
